It's a waxy, whitish powder. It is frequently combined with other bread softeners like mono- and diglycerides and is primarily used as a dough conditioner. (Kamel 1993). Emulsifiers, seasoning, anti-dusting, stabilizers, release agents, and/or thickenings are additional uses for food-grade calcium stearate. (Merck 2001).
